Five Winter Comfort Foods

Winter draws on and for me that means it’s very much comfort food season. I am coming home on dark evenings, tired and cold so the warm hug of favourite foods is most welcome.

So here, in no particular order, are my favourite comfort foods. (Warning, there’s a lot of cheese involved) 

1 – Cheese on toast. The simplest of comfort foods, perhaps with a twist or two of black pepper before the cheese is melted. A cheese toastie is a suitable substitute but a proper open-faced version with lava hot melted cheese is a pure joy! 

2 – Cauliflower Cheese. I’m not a big vegetable eater. I don’t like your regular veg like peas and carrots at all. However, perfectly cooked cauli with a nice thick cheese sauce poured all over it is a very good way to get a few vitamins into my system, along with more cheese obviously. 

3 – Potatoes, Bacon and Cheese. Oven cooked layers of sliced potato and bacon covered in a cheese sauce is one of my favourite dishes. Coming home to this after a stressful day and train journey home is the very definition of comfort food. 

4 – Baked Potato with Cheese. Another simple one. Almost instant gratification if you buy precooked frozen baked potatoes you can sling in the microwave. Bit of butter, handfulls of grated cheese, twist or two of pepper and I am a happy girl. 

5 – Mum’s Homemade Veggie Soup. No cheese in the one, though I don’t ask what else is in it so I don’t think about what veggies I’m eating. It all gets blended down into a thick vegetable puree and diluted to taste to make the best soup ever. Perfection.
